Savor the vibrant flavors of this refreshing arugula and beetroot salad with a zesty citrus vinaigrette. This delightful salad combines peppery arugula, earthy roasted beetroot, juicy oranges, crunchy pistachios, and sweet pomegranate seeds, all tossed in a tangy orange-infused dressing.

Ingredients

4 handfuls arugula (lettuce)
14 ounces ounces cooked beetroot
2 orange
13 cup pomegranate seeds (optional)
14 cup chopped pistachios (or other nuts)
3 tablespoons olive oil
1 tablespoon balsamic vinegar
1 cup feta cheese
Salt and pepper

Instructions

1. Prepare the orange supremes, keeping the flesh of the uncut fruit to make juice by squeezing it into a bowl.
2. Cut the beets into slices.
3. To make the dressing, use orange juice, add olive oil and balsamic vinegar, salt and pepper. Mix.
4. Place the arugula, beets, orange pieces, feta cheese, pistachios and pomegranate seeds in a salad bowl and pour in the vinaigrette. Toss.
