Instructions

    1. Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9x5x3-inch loaf pan.
    2. In a saucepan over medium heat, combine peeled and cubed Gala apples, 4 tablespoons of butter, honey, 1 tablespoon of cinnamon, and a cinnamon stick. Cover and cook for approximately 10 minutes, stirring frequently.
    3. While the apples are cooking, sift together all-purpose flour, baking powder, and fine salt in a mixing bowl.
    4. In the bowl of a stand mixer, cream together the remaining 8 tablespoons of butter, the remaining 1 tablespoon of cinnamon, and white sugar until light and fluffy. Gradually add eggs one at a time, ensuring full incorporation after each addition. Mix in vanilla extract.
    5. Remove the cinnamon stick from the cooked apples, then mash them. Fold the mashed apples and chopped toasted pecans into the batter using a rubber spatula. Gently mix in the flour mixture until just combined. Transfer the batter into the prepared loaf pan.
    6. Bake the loaf in the preheated oven for about 1 hour or until a toothpick inserted in the center comes out clean. Allow the loaf to cool on a wire rack before serving.
