Apple Cinnamon Pecan Loaf

Instructions
1. | Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9x5x3-inch loaf pan. |

2. | In a saucepan over medium heat, combine peeled and cubed Gala apples, 4 tablespoons of butter, honey, 1 tablespoon of cinnamon, and a cinnamon stick. Cover and cook for approximately 10 minutes, stirring frequently. |

4. | In the bowl of a stand mixer, cream together the remaining 8 tablespoons of butter, the remaining 1 tablespoon of cinnamon, and white sugar until light and fluffy. Gradually add eggs one at a time, ensuring full incorporation after each addition. Mix in vanilla extract. |
