Apple Pie Muffins

Ingredients

1⁄4 | cup Brown Sugar (Packed) |
1 | Egg (large) |
100 | grams Greek Yoghurt |
1 1⁄2 | cup flour (of your choice ex. oat flower, almond flour) |
1⁄2 | teaspoon cinnamon (if you like) |
2 | apples, finely diced |
1⁄4 | teaspoon salt |
Instructions
1. | Preheat the oven to 190°C (375°F). |

2. | In a large mixing bowl, combine the sugar and egg, whisking until smooth and shiny. |
3. | Add the Greek Yoghurt and cooled butter, whisking again until smooth. |
4. | Sift in the flour and cinnamon, stirring the batter until just combined. |
5. | Mix in the diced apple pieces until well distributed. |
6. | Spoon the batter into 12 muffin cases and bake in the preheated oven for about 22-25 minutes. To check for readiness, insert a skewer or knife into a muffin; it should come out clean. |
7. | Allow the muffins to cool in the pan for 10 minutes. Then, remove them from the pan, place on a cooling rack, and dust with icing sugar. |
