Instructions

1. Preheat the oven to 190°C (375°F).
2. In a large mixing bowl, combine the sugar and egg, whisking until smooth and shiny.
3. Add the Greek Yoghurt and cooled butter, whisking again until smooth.
4. Sift in the flour and cinnamon, stirring the batter until just combined.
5. Mix in the diced apple pieces until well distributed.
6. Spoon the batter into 12 muffin cases and bake in the preheated oven for about 22-25 minutes. To check for readiness, insert a skewer or knife into a muffin; it should come out clean.
7. Allow the muffins to cool in the pan for 10 minutes. Then, remove them from the pan, place on a cooling rack, and dust with icing sugar.
