Apple, Sauerkraut & Cheddar Quesadillas

Delicious quesadillas filled with a flavorful combination of sauerkraut, apples, and cheddar cheese, perfect for a main dish or appetizer.

1 | cup sauerkraut (rinsed) |

2 | tablespoons olive oil |
2 | large flour tortillas (two 10-inch tortillas) |
1 | extra-sharp cheddar cheese (freshly grated) |
1 | small granny smith apples, juicy apple (peeled and very thinly sliced) or 1 small other tart juicy apple (peeled and very thinly sliced) |

Instructions

- In a medium nonreactive skillet, combine sauerkraut and water. Heat gently until the liquid has evaporated, being careful not to let the sauerkraut stick to the pan. Remove from heat.
- Preheat the oven to 425°F.
- Line a large cookie sheet with parchment paper.
- Brush each large tortilla with about one tablespoon of olive oil. Flip the tortilla over.
- On each tortilla, sprinkle half of it with 1/3 cup of cheese.
- Place half of the apple slices over the cheese on each tortilla, followed by half of the sauerkraut, spreading them evenly.
- Sprinkle each tortilla with another 1/3 cup of cheese.
- Fold the tortilla over the filled half and press down gently.
- If desired, top the quesadillas with additional grated cheese.
- Bake the quesadillas for 10-12 minutes until the top and bottom are slightly golden.
- Transfer the quesadillas to a wire rack to cool for about 10 minutes. Then, slide them onto a cutting board and cut them into halves or quarters.
- For added flavor, consider adding some chopped ham layered with the other ingredients.
- Yields: 2 main-dish servings or 4 appetizer servings.
