Apple, Sauerkraut & Cheddar Quesadillas

Delicious quesadillas filled with a flavorful combination of sauerkraut, apples, and cheddar cheese, perfect for a main dish or appetizer.

Ingredients

1 cup sauerkraut (rinsed)
½ cup water
2 tablespoons olive oil
2 large flour tortillas (two 10-inch tortillas)
1 extra-sharp cheddar cheese (freshly grated)
1 small granny smith apples, juicy apple (peeled and very thinly sliced) or 1 small other tart juicy apple (peeled and very thinly sliced)
chopped ham (optional)

Instructions

    1. In a medium nonreactive skillet, combine sauerkraut and water. Heat gently until the liquid has evaporated, being careful not to let the sauerkraut stick to the pan. Remove from heat.
    2. Preheat the oven to 425°F.
    3. Line a large cookie sheet with parchment paper.
    4. Brush each large tortilla with about one tablespoon of olive oil. Flip the tortilla over.
    5. On each tortilla, sprinkle half of it with 1/3 cup of cheese.
    6. Place half of the apple slices over the cheese on each tortilla, followed by half of the sauerkraut, spreading them evenly.
    7. Sprinkle each tortilla with another 1/3 cup of cheese.
    8. Fold the tortilla over the filled half and press down gently.
    9. If desired, top the quesadillas with additional grated cheese.
    10. Bake the quesadillas for 10-12 minutes until the top and bottom are slightly golden.
    11. Transfer the quesadillas to a wire rack to cool for about 10 minutes. Then, slide them onto a cutting board and cut them into halves or quarters.
    12. For added flavor, consider adding some chopped ham layered with the other ingredients.
    13. Yields: 2 main-dish servings or 4 appetizer servings.
