Delight your taste buds with these Armenian sesame rolls filled with a rich tahini mixture, baked to perfection.

Ingredients

3 12 cups all-purpose flour, sifted
1 cup milk (I used 2%)
2 14 teaspoons yeast
1 cup olive oil
1 tablespoon sugar
1 teaspoon salt
1 beaten egg
1 cup tahini paste
1 cup honey
1 egg
1 tablespoon sesame seeds

Instructions

1. Preheat the oven to 325F. In a bowl, combine sifted flour, sugar, yeast, and salt. In a separate small bowl, mix the beaten egg with olive oil. Warm up the milk and add it to the flour mixture along with the egg mixture. Knead until you have a smooth, elastic, and non-sticky dough. Add more flour if necessary.
2. Cover the dough with a damp cloth and let it rest for 30 minutes. Note that the dough will not rise significantly.
3. Divide the dough into 12 pieces, cover them, and let them sit for about 20 minutes.
4. Roll out each piece of dough into a thin circle. Spread a layer of the tahini mixture over the dough. Roll up the dough into a rope starting from the longest edge. Coil the rope to form a bun and flatten it gently using a rolling pin or your hand. Place the buns on a greased baking sheet. Repeat with the remaining dough.
5. Brush the rolls with beaten egg, sprinkle sesame seeds on top, and bake for 25-30 minutes or until lightly browned. Enjoy these delightful rolls on their own or with a touch of butter. Store in an airtight container for freshness.
