Armenian Tahinli Rolls

3 1⁄2 | cups all-purpose flour, sifted |

1 | cup milk (I used 2%) |
2 1⁄4 | teaspoons yeast |
1 | cup olive oil |
1 | tablespoon sugar |
1 | teaspoon salt |
1 | beaten egg |
1 | cup tahini paste |
1 | cup honey |
1 | egg |
1 | tablespoon sesame seeds |
Instructions
1. | Preheat the oven to 325F. In a bowl, combine sifted flour, sugar, yeast, and salt. In a separate small bowl, mix the beaten egg with olive oil. Warm up the milk and add it to the flour mixture along with the egg mixture. Knead until you have a smooth, elastic, and non-sticky dough. Add more flour if necessary. |

2. | Cover the dough with a damp cloth and let it rest for 30 minutes. Note that the dough will not rise significantly. |
3. | Divide the dough into 12 pieces, cover them, and let them sit for about 20 minutes. |
4. | Roll out each piece of dough into a thin circle. Spread a layer of the tahini mixture over the dough. Roll up the dough into a rope starting from the longest edge. Coil the rope to form a bun and flatten it gently using a rolling pin or your hand. Place the buns on a greased baking sheet. Repeat with the remaining dough. |
5. | Brush the rolls with beaten egg, sprinkle sesame seeds on top, and bake for 25-30 minutes or until lightly browned. Enjoy these delightful rolls on their own or with a touch of butter. Store in an airtight container for freshness. |
