Ingredients

1 pound dry pinto beans
2 onions, diced
1 clove garlic, minced
2 teaspoons salt
1 ½ teaspoons pepper
¾ cup butter
1 cup shredded Cheddar cheese

Instructions

1. Begin by soaking the dry pinto beans in 1 quart of water overnight.
2. In a large saucepan, place the soaked beans and add enough water to cover them. Include diced onions, minced garlic, salt, and pepper. Bring the mixture to a boil, then reduce the heat to simmer for 1 to 2 hours until the beans are tender. Add more water during cooking if necessary to prevent sticking.
3. Using a potato masher, mash the cooked beans and incorporate the butter. Continue cooking and stirring until the mixture thickens and the butter is fully absorbed. Adjust the seasoning as needed.
4. Preheat the oven to 350 degrees F (175 degrees C). Transfer the bean mixture to a 9x13 inch baking dish and sprinkle the shredded Cheddar cheese on top. Bake for about 15 minutes or until the cheese has melted.
