Authentic Frijoles Refritos
This recipe for refried beans is an authentic dish that requires a bit more effort but is well worth it for its traditional and delicious taste.
Ingredients
1 | pound dry pinto beans |

2 | onions, diced |
1 | clove garlic, minced |
2 | teaspoons salt |
1 ½ | teaspoons pepper |
¾ | cup butter |
1 | cup shredded Cheddar cheese |
Instructions
1. | Begin by soaking the dry pinto beans in 1 quart of water overnight. |

2. | In a large saucepan, place the soaked beans and add enough water to cover them. Include diced onions, minced garlic, salt, and pepper. Bring the mixture to a boil, then reduce the heat to simmer for 1 to 2 hours until the beans are tender. Add more water during cooking if necessary to prevent sticking. |
3. | Using a potato masher, mash the cooked beans and incorporate the butter. Continue cooking and stirring until the mixture thickens and the butter is fully absorbed. Adjust the seasoning as needed. |
4. | Preheat the oven to 350 degrees F (175 degrees C). Transfer the bean mixture to a 9x13 inch baking dish and sprinkle the shredded Cheddar cheese on top. Bake for about 15 minutes or until the cheese has melted. |
