Ingredients

1 cup warm water
2 teaspoons active dry yeast
2 ½ bread flour
2 teaspoons kosher salt
2 teaspoons olive oil
vegetable oil, for cooking
4 teaspoons dried oregano
½ teaspoon granulated garlic
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper

Instructions

    1. Preparing the Pita Bread:
    2. In the bowl of an electric mixer fitted with a dough hook, combine the warm water and active dry yeast. Allow it to sit for approximately 5 minutes until it becomes foamy. Add bread flour, kosher salt, and olive oil. Mix on low speed for 1 to 2 minutes until the flour is fully incorporated. Increase the mixer speed to medium and continue mixing for 3 to 4 minutes until the dough forms a smooth ball. Transfer the dough to a lightly oiled bowl, cover it with a clean dish towel, and let it rise for about 1.5 hours until it doubles in volume.
    3. On a lightly floured work surface, divide the dough into 8 equal pieces. Roll out each piece into a thin 8-inch circle. Keep the pitas covered with a dish towel as you work.
    4. Heat a few teaspoons of vegetable oil in a large cast-iron skillet over medium-high heat. Cook each pita for 1 to 2 minutes per side until they turn golden brown and get charred. Repeat with the remaining pitas, adding more oil as needed.
