Instructions
1. | Preparing the Pita Bread: |

2. | In the bowl of an electric mixer fitted with a dough hook, combine the warm water and active dry yeast. Allow it to sit for approximately 5 minutes until it becomes foamy. Add bread flour, kosher salt, and olive oil. Mix on low speed for 1 to 2 minutes until the flour is fully incorporated. Increase the mixer speed to medium and continue mixing for 3 to 4 minutes until the dough forms a smooth ball. Transfer the dough to a lightly oiled bowl, cover it with a clean dish towel, and let it rise for about 1.5 hours until it doubles in volume. |
3. | On a lightly floured work surface, divide the dough into 8 equal pieces. Roll out each piece into a thin 8-inch circle. Keep the pitas covered with a dish towel as you work. |
4. | Heat a few teaspoons of vegetable oil in a large cast-iron skillet over medium-high heat. Cook each pita for 1 to 2 minutes per side until they turn golden brown and get charred. Repeat with the remaining pitas, adding more oil as needed. |
