Instructions

- Begin by preheating the oven to 350 degrees Fahrenheit.
- Prepare an 8-inch square cake pan by greasing it with non-stick cooking spray or butter, then set it aside.
- In a large mixing bowl, cream the room temperature butter with sugar until light and fluffy. Beat in the egg until well combined.
- Stir in the flour, chopped walnuts, cinnamon, nutmeg, baking soda, and salt until just combined. Gently fold in the peeled and grated apples.
- Pour the batter into the prepared cake pan.
- Bake for 30-40 minutes or until the cake is fully baked; a toothpick inserted into the center should come out clean.
- Once cooled, cut the cake into squares and serve with the warm caramel drizzle (recipe follows).
- To prepare the caramel drizzle, melt butter in a saucepan over low heat. Add brown sugar, white sugar, whipping cream, vanilla, and a pinch of salt. Bring the mixture to a boil, stirring constantly.
