3 tablespoons butter, divided
1 Granny Smith apple, peeled and sliced
1 tablespoon packed brown sugar
4 (4 ounce) skinless, boneless chicken breast halves
14 teaspoon ground cinnamon
14 teaspoon salt
14 teaspoon ground black pepper, or to taste
1 onion, sliced into rings and rings separated
12 cup apple cider
14 cup apple cider vinegar
2 cups cooked wide noodles

Instructions

1. In a large skillet, melt 2 tablespoons of butter over medium heat. Sauté the apples until they are gently caramelized, approximately 5 to 10 minutes. Sprinkle the brown sugar over the apples and continue to cook until tender, for an additional 5 minutes. Transfer the apples to a plate.
2. Place the chicken on a sheet of waxed paper. Season each side with a hint of cinnamon, salt, and pepper. Using the same skillet, melt the remaining tablespoon of butter and brown the chicken for 2 to 3 minutes per side. Once browned, transfer the chicken to a plate.
3. In the same skillet used for the chicken, sauté the sliced onions until they turn tender, for about 5 to 10 minutes. Stir in the apple cider and apple cider vinegar, then reduce the heat to medium-low. Allow the mixture to simmer until the sauce slightly thickens, approximately 2 minutes.
4. Return the chicken to the onion mixture, spooning the flavorful cider sauce over the chicken. Cook until the chicken is cooked through, and the liquid reduces by half, an additional 5 to 10 minutes. Stir in the sautéed apples and cook until warmed through, about 2 to 3 minutes.
5. To serve, delicately arrange a bed of cooked wide noodles on a plate, top with the succulent chicken, and generously spoon the delectable cider sauce over the dish.
