1 ½ white sugar
1 cup pumpkin puree
½ cup butter, softened
1 egg
1 teaspoon vanilla extract
2 ¾ all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
¾ cup packed brown sugar
¼ cup butter
1 ¼ powdered sugar
1 teaspoon vanilla extract

Instructions

    1. Begin by preheating the oven to 375 degrees F (190 degrees C).
    2. In a large bowl, combine the white sugar, pumpkin puree, softened butter, egg, and vanilla extract.
    3. In a separate bowl, sift together the all-purpose flour, baking powder, and baking soda. Gradually add this mixture to the pumpkin mixture until a soft dough forms.
    4. Using a heaping teaspoon, drop the dough onto ungreased cookie sheets, spacing them 2 inches apart.
    5. Bake the cookies in the preheated oven until they turn golden, typically around 10 to 12 minutes. Once baked, allow them to cool completely for about 15 to 30 minutes.
