Everything in this skillet rides on the bacon. It fries first, and its drippings then cook the white onion, green bell pepper and corn until the edges catch and caramelize; strips of pimento and the crumbled bacon go back in at the end. It's the potato-free cousin of potatoes O'Brien — a sweet-smoky, six-serving side that takes half an hour and one pan.
