A delightful dish of roasted cherry tomatoes and kalamata olives infused with the aromatic flavors of fresh thyme, served over toasted French bread.

2 | teaspoons balsamic vinegar |

1. | Preheat the oven to 425 degrees Fahrenheit. |

2. | Prepare a small roasting pan by coating the bottom with olive oil. Add cherry tomatoes, kalamata olives, a pinch of sea salt, and freshly ground pepper. Toss the ingredients together and garnish with fresh thyme. |
3. | Roast in the preheated oven for 35 minutes. Then, sprinkle fresh mozzarella cheese over the tomatoes and continue roasting for an additional 10-15 minutes, or until the tomatoes start to split open. |
4. | Remove the pan from the oven and drizzle the contents with balsamic vinegar. |
5. | While the tomatoes and olives are roasting, slice the French bread and toast until golden brown. |
6. | To serve, spoon the roasted tomatoes, olives, and melted mozzarella over the toasted bread. Be sure to soak up the flavorful juices with each bite. Pair this dish with a generous pour of wine for a perfect meal. |
