1
tablespoon freshly squeezed lemon juice
14
cup granulated sugar

For the berry panna cotta

3

2
teaspoons powdered gelatin
1 12
cups heavy cream
2
tablespoons granulated sugar
34
cup berry puree (from above)
12
cup whole milk
12
teaspoon vanilla extract

For the vanilla panna cotta

3
tablespoons cool water
2
teaspoons powdered gelatin
1
cup heavy cream
1
cup whole milk
14
cup granulated sugar
12
teaspoon vanilla paste, or 0.75 teaspoon vanilla extract

Instructions

1. Prepare 6 small cups, jars, or other individual serving dishes. Place on a baking sheet, and make room for that baking sheet in your refrigerator.
2. Make the berry purée: In a medium pot, combine the fresh berries, lemon juice, and granulated sugar. Cook over medium heat until the fruit is very tender and breaks down, 8 to 10 minutes. Strain the purée to remove any seeds or fibrous bits, ensuring a smooth texture. Set aside.
3. Meanwhile, make the berry panna cotta: Bloom gelatin in cool water, then combine with simmered cream and sugar. Add berry puree, milk, and vanilla. Pour mixture into prepared dishes and chill until set, at least 2 hours.
4. Make the vanilla panna cotta: Bloom gelatin in cool water, then combine with simmered cream and sugar. Add milk and vanilla. Pour mixture into prepared dishes and chill until set, about 2 hours to 4 days. Keep chilled until ready to serve.
