| 1. | Prepare 6 small cups, jars, or other individual serving dishes. Place on a baking sheet, and make room for that baking sheet in your refrigerator. |

| 2. | Make the berry purée: In a medium pot, combine the fresh berries, lemon juice, and granulated sugar. Cook over medium heat until the fruit is very tender and breaks down, 8 to 10 minutes. Strain the purée to remove any seeds or fibrous bits, ensuring a smooth texture. Set aside. | 
| 3. | Meanwhile, make the berry panna cotta: Bloom gelatin in cool water, then combine with simmered cream and sugar. Add berry puree, milk, and vanilla. Pour mixture into prepared dishes and chill until set, at least 2 hours. | 
| 4. | Make the vanilla panna cotta: Bloom gelatin in cool water, then combine with simmered cream and sugar. Add milk and vanilla. Pour mixture into prepared dishes and chill until set, about 2 hours to 4 days. Keep chilled until ready to serve. |
