Black Bean Soup

Ingredients

1⁄2 | cup minced onion |
1⁄4 | cup diced green bell pepper |
3 | tablespoons chopped carrots |
1 | tablespoon minced garlic |
1 1⁄2 | teaspoons ground cumin |
1 | teaspoon dried oregano |
1 | teaspoon chili powder |
1⁄4 | teaspoon fresh ground black pepper |
3 | cups broth |
3 | (15 ounce) cans black beans, rinsed and drained |

Instructions
1. | Heat olive oil in a large saucepan over medium heat. |

2. | Add diced celery, minced onion, diced green bell pepper, and chopped carrots. Cook for about 10 minutes or until the vegetables are tender, stirring occasionally. Add minced garlic, ground cumin, dried oregano, chili powder, and fresh ground black pepper; sauté for an additional 3 minutes. |
3. | Pour in the vegetable broth, and the rinsed and drained black beans. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes. Allow it to cool slightly. |
4. | Garnish with sliced green onions, avocado or a tablespoon of sour cream if desired. |
