12 boiling water
1 cup dried black-eyed peas
1 cup dried navy beans
1 cup diced green pepper

2 tablespoons onion powder
1 tablespoon basil leaves, crushed

1. Melt butter in a large stock pot.
2. Add thinly sliced carrots and cook for 5 minutes.
3. Stir in boiling water, black-eyed peas, navy beans, diced green pepper, salt, and crushed red pepper flakes. Add more water if needed to cover all ingredients.
4. Cover and cook until all ingredients are tender, approximately 1 1/2 to 2 hours.
5. During the last 10-15 minutes of cooking, add in chopped peanuts, onion powder, crushed basil leaves, and ground coriander.
6. Taste the soup and adjust seasonings as needed. It should have a thick consistency.
