Butter Crackers with Gluten-Free Flours

Ingredients

Instructions
1. | In the bowl of a stand mixer fitted with the whisk attachment, combine tapioca flour, brown rice flour, white rice flour, white sugar, xanthan gum, and salt. Add the softened butter and mix on low to medium speed until the mixture resembles coarse crumbs. Remember to scrape down the sides and bottom of the bowl as needed. |

2. | While the mixer is on low, slowly pour in the whole milk. Increase the speed gradually and mix until a well-combined batter forms. Cover the bowl and let the dough rest for 15 minutes. |
3. | Preheat your oven to 325 degrees F (165 degrees C). Prepare 2 sheets of parchment paper by spraying them with cooking spray. |
4. | On one of the greased parchment sheets, roll out the dough. Place the second sheet on top, sprayed side facing down, and roll the dough to an even 1/8-inch thickness. Remove the top sheet and gently push any thin edges back towards the center to prevent burning during baking. |
5. | Using a pizza cutter, cut the dough into cracker shapes and prick each square with a fork. Transfer the parchment paper with the crackers onto a baking sheet and position it on the middle rack in the oven. |
6. | Bake the crackers for 3 minutes, then sprinkle sea salt to taste over the top. Continue baking until the crackers are golden brown and crisp, which usually takes 18 to 25 minutes. Let them cool on the baking sheet or transfer to a wire rack for a crisper finish. |
