1 cup butter, softened (no substitutes)
1 cup sugar
2 eggs
1 teaspoon vanilla
1 teaspoon almond extract
3 14 cups all-purpose flour
12 teaspoon baking soda
12 teaspoon baking powder
12 teaspoon salt

For Icing

2 cups sifted confectioners' sugar (the sugar must be sifted)
1 tablespoon milk (adding in more if needed for proper spreading consistency)
1 tablespoon light corn syrup
14 teaspoon almond extract (can use 0.5 teaspoon of vanilla as a substitute for almond)
food coloring (use your choice of colors)

Instructions

  • For Cookie Preparation

    1. In a large bowl, combine softened butter with sugar, eggs, vanilla, and almond extract. Beat using an electric mixer on high speed until the mixture is light and fluffy.
    2. In another bowl, combine all-purpose flour with baking powder, baking soda, and salt. Gradually stir the dry ingredients into the butter mixture until well blended.
    3. Cover the bowl with plastic wrap and refrigerate for 2 hours.
    4. Preheat the oven to 400°F (200°C).
    5. Line cookie sheets with parchment paper (do not grease the sheets, use parchment paper only).
    6. On a lightly floured surface, roll out the dough to about 1/4-inch thickness.
    7. Use cookie cutters to cut the dough into desired shapes.
    8. Place the cookies 2 inches apart on the prepared cookie sheet.

  • For Frosting

    1. In a small bowl, mix sifted confectioners' sugar with milk (start with 1-2 tablespoons, adding more if needed for the proper spreading consistency).
    2. Beat in light corn syrup and almond extract until the icing is smooth and glossy. Add more corn syrup if the icing is too thick.
    3. Divide the icing into separate bowls for different colors.
    4. Add food coloring until the desired intensity is achieved.
    5. Apply the icing to the cookies using a brush or dip the edges of the cookies into the icing.
    6. Allow the icing to set on waxed paper.
