For Cookie Preparation
- In a large bowl, combine softened butter with sugar, eggs, vanilla, and almond extract. Beat using an electric mixer on high speed until the mixture is light and fluffy.
- In another bowl, combine all-purpose flour with baking powder, baking soda, and salt. Gradually stir the dry ingredients into the butter mixture until well blended.
- Cover the bowl with plastic wrap and refrigerate for 2 hours.
- Preheat the oven to 400°F (200°C).
- Line cookie sheets with parchment paper (do not grease the sheets, use parchment paper only).
- On a lightly floured surface, roll out the dough to about 1/4-inch thickness.
- Use cookie cutters to cut the dough into desired shapes.
- Place the cookies 2 inches apart on the prepared cookie sheet.
- Bake for 4-6 minutes.
- Transfer the cookies to wire racks to cool completely before icing.
-
For Frosting
- In a small bowl, mix sifted confectioners' sugar with milk (start with 1-2 tablespoons, adding more if needed for the proper spreading consistency).

- Divide the icing into separate bowls for different colors.
- Add food coloring until the desired intensity is achieved.
- Apply the icing to the cookies using a brush or dip the edges of the cookies into the icing.
- Allow the icing to set on waxed paper.
