| 1 | cup Fresh salad leaves (of your choice) | 
| 3 | Sweet Potatoes, peeled and cubed | 
| 1 | tablespoon Fresh Chopped Parsley | 
| 2 | tablespoons Olive Oil | 
| 2⁄3 | cup Cubed Feta Cheese | 
| 1. | Preheat the oven to 400°F (200°C). |

| 2. | Peel the sweet potatoes and cut them into small cubes, approximately 1cm in size. | 
| 3. | In a small saucepan, melt the butter. | 
| 4. | Pour the melted butter over the sweet potato cubes in a mixing bowl. | 
| 5. | Spread the sweet potatoes on a baking sheet lined with parchment paper and bake in the preheated oven for about 20 minutes until they soften. | 
| 6. | Let the sweet potatoes cool, then transfer them to a salad bowl. Add the chopped parsley, olive oil, cubed feta cheese, and some salad leaves of your choice. Toss gently to combine. |
