Sweet Potatoes, peeled and cubed

Instructions

1. Preheat the oven to 400°F (200°C).
2. Peel the sweet potatoes and cut them into small cubes, approximately 1cm in size.
3. In a small saucepan, melt the butter.
4. Pour the melted butter over the sweet potato cubes in a mixing bowl.
5. Spread the sweet potatoes on a baking sheet lined with parchment paper and bake in the preheated oven for about 20 minutes until they soften.
6. Let the sweet potatoes cool, then transfer them to a salad bowl. Add the chopped parsley, olive oil, cubed feta cheese, and some salad leaves of your choice. Toss gently to combine.
