Roasted Sweet Potato and Avocado Salad

Delight in this vibrant avocado and roasted sweet potato salad. Enjoy a medley of flavors with tender sweet potatoes, creamy avocado, and a tangy-sweet dressing over a bed of crisp mixed greens. Topped with shallots and parsley, this salad is a delightful addition to any meal.

1 | shallot, peeled & sliced |
2-4 | cup mixed greens |
1⁄4 | cup flat leaf parsley, chopped |
1 | sesame seeds (optional) |
1⁄2 | cup olive oil |
1⁄3 | cup apple cider vinegar |
2 | plain Greek yogurt or creme fraiche |
2 | maple syrup (optional) |
2 | tablespoon Dijon mustard |

Instructions
1. | Prepare the salad dressing by combining olive oil, apple cider vinegar, Greek yogurt, maple syrup (optional), Dijon mustard, sea salt, and cracked pepper in a medium-sized bowl. Whisk together or shake vigorously in a mason jar. |

2. | Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper. In a large bowl, toss sweet potato slices with olive oil, sea salt, and cracked pepper. Spread them on the baking sheet and roast for 20 minutes. Flip the potatoes and bake for an additional 15 minutes until they have crispy char marks. |
3. | While the sweet potatoes are roasting, arrange mixed greens on individual plates. Top each plate with 4-6 sweet potato slices, shallot slices, and avocado slices. Drizzle 1-2 tablespoons of dressing over the sweet potatoes. Sprinkle chopped parsley and sesame seeds over each plate. |
