Instructions
1. | PRECOOK BEETS: Wash the beets and trim the ends off before cooking. |

2. | To ROAST: Place trimmed beets in a roasting pan with a little water, covered with foil. Roast at 425°F for 30-45 minutes until easily pierced with a knife. |
3. | To BOIL: Cook the beets for 20 - 30 minutes until tender. |
4. | Slip off the skins under running water, then grate or dice the beets. |
5. | PREPARE SALAD: Mix grated or diced cooked beets, chopped walnuts, and crushed garlic. |
6. | Season with salt and pepper. Add mayonnaise (or yogurt) and mix well. |
