Ingredients

2 14 lbs red beets, grated or diced
3 12 ounces walnuts, chopped
2 garlic cloves, crushed
salt to taste
pepper to taste
3 tablespoons mayonnaise (yogurt or olive oil for a healthier version)

Instructions

1. PRECOOK BEETS: Wash the beets and trim the ends off before cooking.
2. To ROAST: Place trimmed beets in a roasting pan with a little water, covered with foil. Roast at 425°F for 30-45 minutes until easily pierced with a knife.
3. To BOIL: Cook the beets for 20 - 30 minutes until tender.
4. Slip off the skins under running water, then grate or dice the beets.
5. PREPARE SALAD: Mix grated or diced cooked beets, chopped walnuts, and crushed garlic.
6. Season with salt and pepper. Add mayonnaise (or yogurt) and mix well.
