A delightful combination of cooked, mashed buttercup squash, layered with tender sliced apples, and topped with a crunchy cornflake-pecan mixture, baked to perfection. This colorful side dish is sure to impress your guests.

Ingredients

3 peeled, seeded, and cut into ¾-inch chunks
1/4 cup butter
1 tablespoon brown sugar
1/4 teaspoon salt
1 dash white pepper
1 1/2 tablespoons butter
6 sliced peeled apples
1/4 cup white sugar
1 1/2 cornflakes cereal, coarsely crushed
1/2 cup chopped pecans
1/2 cup brown sugar
2 tablespoons melted butter

Instructions

    1. Begin by preheating the oven to 350 degrees F (175 degrees C).
    2. In a saucepan, place the buttercup squash chunks and cover with water. Bring to a boil and cook until the squash is tender, approximately 15 minutes. Drain the squash and then combine it with 1/4 cup of butter, 1 tablespoon of brown sugar, a pinch of salt, and a dash of white pepper. Mash the ingredients together.
    3. In a large skillet over low heat, melt 1 1/2 tablespoons of butter. Add the sliced apples, sprinkle with white sugar, and cover. Cook over low heat until the apples are barely tender, stirring occasionally, for about 5 minutes. Spread the apples in a 3-quart casserole dish and evenly spoon the mashed squash over the apples.
    4. Combine the coarsely crushed cornflakes, chopped pecans, 1/2 cup of brown sugar, and melted butter. Sprinkle this mixture evenly over the squash layer in the casserole.
    5. Bake the casserole in the preheated oven until heated through, approximately 15 minutes.
