Buttercup Squash and Apple Casserole
A delightful combination of cooked, mashed buttercup squash, layered with tender sliced apples, and topped with a crunchy cornflake-pecan mixture, baked to perfection. This colorful side dish is sure to impress your guests.
Ingredients

1 | tablespoon brown sugar |
1/4 | teaspoon salt |
1 | dash white pepper |
1 1/2 | tablespoons butter |
6 | sliced peeled apples |
1/4 | cup white sugar |
1 1/2 | cornflakes cereal, coarsely crushed |
1/2 | cup chopped pecans |
1/2 | cup brown sugar |
2 | tablespoons melted butter |
Instructions
1. | Begin by preheating the oven to 350 degrees F (175 degrees C). |

2. | In a saucepan, place the buttercup squash chunks and cover with water. Bring to a boil and cook until the squash is tender, approximately 15 minutes. Drain the squash and then combine it with 1/4 cup of butter, 1 tablespoon of brown sugar, a pinch of salt, and a dash of white pepper. Mash the ingredients together. |
3. | In a large skillet over low heat, melt 1 1/2 tablespoons of butter. Add the sliced apples, sprinkle with white sugar, and cover. Cook over low heat until the apples are barely tender, stirring occasionally, for about 5 minutes. Spread the apples in a 3-quart casserole dish and evenly spoon the mashed squash over the apples. |
4. | Combine the coarsely crushed cornflakes, chopped pecans, 1/2 cup of brown sugar, and melted butter. Sprinkle this mixture evenly over the squash layer in the casserole. |
5. | Bake the casserole in the preheated oven until heated through, approximately 15 minutes. |
