A delightful dish of Cajun-seasoned salmon cubes served over fluffy white rice, drizzled with a zesty bang bang sauce, and garnished with fresh chives.

Ingredients

1 cup uncooked white rice
4 salmon fillets
1 teaspoon each: garlic powder, salt, black pepper
3 teaspoons Cajun seasoning
1 tablespoon vegetable oil
1 tablespoon unsalted butter
3 tablespoons chopped chives, for serving
12 cup mayonnaise
14 cup sweet chili sauce
2 tablespoons sriracha sauce, less or more to taste
1 tablespoon honey
1 tablespoon lime juice

Instructions

    1. Prepare the white rice in salted water following the instructions on the package.
    2. Begin by drying the salmon fillets with a gentle pat. Cut the fillets lengthwise in half, then into 1-inch/2.5 cm cubes. In a mixing bowl, combine the salmon cubes with garlic powder, salt, black pepper, and Cajun seasoning. Ensure the salmon is evenly coated with the seasonings. Set aside.
    3. Create the bang bang sauce by combining all the sauce ingredients in a bowl or jar. Whisk vigorously until well combined.
    4. Finely chop the chives for garnishing.
    5. In a nonstick skillet over medium-high heat, heat vegetable oil and unsalted butter. Add the seasoned salmon cubes in a single layer. Sear for 1 minute, then flip and sear for an additional minute.
    6. To serve, plate the cooked rice, place the seared salmon cubes on top, drizzle with the prepared bang bang sauce, and sprinkle with chopped chives. Pair with a refreshing cucumber salad. Savor the flavors!
