Instructions
1. | Prepare a marble slab or baking sheet by generously greasing it. For homemade marshmallows, cut them into 1-inch squares. If using store-bought marshmallows, slice them in half crosswise. |

2. | In a heavy-bottomed pot with a candy thermometer, combine sugar, light corn syrup, and 1/2 cup of heavy whipping cream over medium-high heat. Bring the mixture to a boil while stirring continuously. Warm the remaining 1/2 cup of cream in a separate saucepan over low heat, without boiling. Once the sugar mixture boils, slowly pour in the warmed cream. Add unsalted butter gradually, stirring until fully combined. Reduce the heat to medium-low and let the mixture boil until it reaches 238°F, known as the “soft ball” stage. |
3. | Remove the pot from the heat and stir in salt and vanilla extract. Let it cool for approximately 5 minutes. During this time, ready your greased baking sheet or slab. Using a fork, coat the marshmallows in the caramel thoroughly, then transfer them onto the greased surface. Repeat this process as desired. Allow the candies to set for 2 to 3 hours, then individually wrap them in wax paper. Store in a cool, dry place. |
