Caribbean Jerk Pork Chops

Ingredients

1 | third cup lemon juice |
1⁄2 | cup onion, chopped fine |
1 | tablespoon brown sugar |
1 | tablespoon green onion, chopped fine |
1 | tablespoon canola oil |
3⁄4 | teaspoon salt |
3⁄4 | teaspoon ground allspice |
3⁄4 | teaspoon ground cinnamon |
3⁄4 | teaspoon ground black pepper |
1⁄2 | teaspoon dried thyme, crushed |
1⁄4 | teaspoon cayenne pepper |
6 | lean pork chops, ½ inch thick |
Instructions
1. | In a blender or food processor, combine water, lemon juice, finely chopped onion, brown sugar, finely chopped green onions, canola oil, salt, ground allspice, ground cinnamon, ground black pepper, crushed dried thyme, and cayenne pepper. Blend until smooth. Reserve 1/2 cup for basting. |

2. | Place the lean pork chops in a shallow glass dish. Pour the remaining marinade over the meat. Cover and refrigerate for at least 12 hours, but no longer than 24 hours. |
3. | Preheat the grill to medium heat and place the grate 4 to 5 inches above the heat source. Oil the grill grate. Arrange the chops on the grate and discard the marinade. Cover the grill and cook the chops for 10 minutes, turning once, or to desired doneness. |
