When outdoor grilling is not an option in the heat, utilize the broiler to infuse these zesty chicken thighs with a delightful char.

Ingredients

1 large onion, chopped
¼ cup lime juice
¼ cup orange juice
8 cloves garlic, peeled
2 tablespoons avocado oil
2 teaspoons ground coriander
2 teaspoons ground cumin
2 teaspoons Mexican oregano
1 teaspoon chipotle chile powder
½ teaspoon smoked paprika
1 pinch salt and ground black pepper to taste
3 pounds boneless, skinless chicken thighs

Instructions

    1. In the bowl of a blender or food processor, combine chopped onion, lime juice, orange juice, garlic, avocado oil, ground coriander, ground cumin, Mexican oregano, chipotle chile powder, and smoked paprika. Pulse several times to mix, then puree for 1 minute until the mixture is smooth.
    2. Transfer the marinade into a 1-gallon resealable bag and add the chicken thighs. Remove excess air from the bag, seal it, and gently massage the contents until the chicken is fully coated. Allow the chicken to marinate in the refrigerator for 30 minutes to 3 hours.
    3. Position an oven rack about 4 inches from the broiler element and preheat the broiler. Arrange the marinated chicken thighs on a broiler pan.
    4. Broil the chicken thighs until they start to char, approximately 8 minutes. Flip the thighs and continue broiling until the second side is lightly charred, around 7 minutes more. Ensure the internal temperature reaches at least 165 degrees F (74 degrees C) by using an instant-read thermometer inserted into the thickest part of the chicken thigh.
    5. Transfer the cooked chicken thighs onto a serving platter.
