2 pounds ground beef
¾ cup fresh bread crumbs
½ cup minced onion
2 large eggs, beaten
1 ½ teaspoons salt
1 ½ teaspoons ground black pepper
3 cups shredded Cheddar cheese

Instructions

    1. Begin by preheating the oven to 350 degrees F (175 degrees C).
    2. In a large mixing bowl, combine the ground beef, fresh bread crumbs, minced onion, beaten eggs, salt, and ground black pepper. Thoroughly mix the ingredients to form a cohesive mixture.
    3. On a sheet of wax paper, gently pat out the meat mixture into a generous 14x18-inch rectangle.
    4. Evenly spread the shredded Cheddar cheese over the meat, ensuring a 3/4 inch border along the edges. Carefully roll the meat into a log, encasing the cheese to create a pinwheel loaf. Seal the ends by pressing the meat together. Transfer the meatloaf to a 10x15-inch baking dish.
    5. Bake the meatloaf in the preheated oven for approximately 1 hour, or until fully cooked. To confirm doneness, use an instant-read thermometer; the center of the meatloaf should register at least 160 degrees F (70 degrees C).
