Cheddar Tofu Burgers

Delicious tofu burgers infused with the flavors of onion, celery, and Cheddar cheese offer a delightful vegetarian twist to classic beef burgers. Perfect when topped with all your favorite burger fixings.

Ingredients

1 (12 ounce) package firm tofu, frozen for 72 hours
2 teaspoons vegetable oil
1 small onion, chopped
1 stalk celery, chopped
1/4 cup shredded Cheddar cheese
1 large egg, beaten
salt and pepper to taste
1/2 cup vegetable oil for frying, or as needed

Instructions

    1. Begin by bringing a large saucepan of water to a gentle simmer. Place the frozen firm tofu, left in its package, in the water. Remove from heat and allow the tofu to thaw for approximately 20 minutes in the warm water.
    2. Take the tofu out of the package and place it on a plate. Place another plate on top of the tofu and use a 3- to 5-pound weight to press it firmly for 20 to 30 minutes. Discard the liquid that accumulates during this process.
    3. While the tofu is draining, heat 2 teaspoons of oil in a small skillet over medium heat. Sauté the chopped onion and celery until they become soft and lightly browned, approximately 5 minutes. Remove from heat.
    4. Finely chop the pressed tofu and place it in a mixing bowl. Combine it with the sautéed onion and celery mixture, shredded Cheddar cheese, beaten egg, salt, and pepper. Mix thoroughly until well combined.
    5. In a large skillet, heat 1/4 inch of oil over medium-high heat. Portion out the tofu mixture into six equal parts in the skillet. Flatten each portion with a spatula to form patties. Fry until each side turns a golden brown, which should take about 5 to 7 minutes per side.
