Ingredients

6 skinless, boneless chicken breasts
2 cups cooked wild rice
12 cup roasted green chili, chopped
1 cup shredded Cheddar cheese
14 cup chopped green onions
1 teaspoon ground cumin
salt to taste
ground black pepper to taste
1 cup crushed corn flakes cereal
1 beaten egg

Instructions

    1. In a mixing bowl, combine cooked wild rice, roasted green chili, shredded Cheddar cheese, chopped green onions, and ground cumin.
    2. Thoroughly rinse the skinless, boneless chicken breasts and pat them dry. Create a pocket in each breast to hold the rice mixture. Fill each chicken breast with the prepared rice stuffing.
    3. Dip each stuffed chicken breast in beaten egg, coat with crushed corn flakes, and arrange in a lightly greased 9x13 inch baking dish. Season with salt and pepper to enhance the flavors.
    4. Bake at 375 degrees F (190 degrees C) for approximately 40 minutes, or until the chicken is cooked through. If the chicken starts to dry out, loosely cover it with foil to retain moisture.
