Orange is the wildcard in this barbecue sauce, cutting through the ketchup-honey-brown sugar base while red chile pepper and hot sauce push back from the other side. Bay leaf, oregano and basil add an herbal undertone most bottled sauces skip entirely. Fifteen minutes on the stove, enough for eight servings' worth of grilling.

cup Worcestershire sauce (start with 1/4 cup. Add rest gradually stop when you reach your desired taste.)

Instructions

1. In a medium saucepan over medium heat, combine Heinz ketchup, honey, brown sugar, and butter. Simmer gently.
2. Stir constantly until the butter is completely melted. Avoid boiling the mixture.
3. Add Worcestershire sauce, orange zest, diced onion, bay leaves, oregano, basil, minced garlic, ground mustard, salt, black pepper, dried red chili pepper, and Louisiana hot sauce. Let it simmer for 10 minutes and adjust seasoning to taste.
4. Gradually adjust the seasoning to reach the desired flavor. For a spicier sauce, add more black pepper or red chili pepper. For a sweeter sauce, increase the amount of honey.
5. Caution: When adding seasoning, do not exceed 1/8 teaspoons at a time. Allow the sauce to simmer for at least five minutes after each addition to enhance the flavors.
6. To prevent burning, avoid boiling the sauce. Stir constantly while cooking.
