A delightful and savory stir fry featuring succulent boneless pork sirloin and cheese tortellini, blended with a flavorful combination of bell peppers, carrots, onions, and pineapples, all tossed in a sweet and sour sauce with hints of teriyaki.

Instructions

    1. Begin by filling a large pot with water for cooking the pasta. Bring the water to a boil without adding salt.
    2. Meanwhile, heat a wok or a large frying pan over high heat. Add 2 tablespoons of olive oil and allow it to heat up. Season the pork lightly with salt and brown it in two batches. Transfer the browned pork to an oven-proof glass dish and set it aside.
    3. Once the water is boiling, add the cheese tortellini along with 1 tablespoon of olive oil. Cook the tortellini for 5 minutes, then drain.
    4. In the wok, sauté the onions and carrots for two minutes. Add the sliced bell peppers and drained pineapple chunks (reserving the juice) and cook for an additional two minutes. Pour in half of the reserved pineapple juice and let it reduce for two minutes. Stir in eight counts of teriyaki sauce and 4 tablespoons of sweet and sour sauce. Mix well and let it cook for another two minutes.
    5. Return the pork along with any drippings to the wok, then add the drained tortellini. Mix everything together, ensuring all ingredients are well combined. Finish with a sprinkle of freshly ground pepper.
    6. Serve the delicious stir fry. For an extra kick, offer Sriracha sauce on the side to balance out the sweetness of the dish.
