A delicious and easy baked potato recipe that is perfect as a side dish or a light meal.

| 1. | Prepare the potato by stabbing it with a fork several times and wrapping it in a paper towel. Place it in the microwave on high for 8 minutes, remembering to turn it halfway through. (Add 2 minutes for each additional potato.) |

| 2. | Once cooked, remove the potato from the microwave and brush it with olive oil. Transfer it to a preheated oven at 200°C (Gas Mark 6) for 15 minutes. |
| 3. | After baking, remove the potato from the oven and make a cross-shaped slice on top. Serve with butter or other desired toppings. |
