6 skin-on, bone-in chicken thighs
salt and ground black pepper to taste
1 pinch garlic powder, or to taste

Instructions

    1. Preheat the oven to 475 degrees F (245 degrees C) and prepare a wire rack inside a broiler pan or baking pan.
    2. Begin by patting the chicken thighs dry with paper towels. Gently lift the skin and season underneath with a sprinkle of salt, pepper, and garlic powder. Replace the skin and continue by seasoning the skin and underside of the thighs with salt, pepper, and garlic powder.
    3. Arrange the seasoned chicken thighs on the prepared rack.
    4. Roast the chicken in the preheated oven until the skin is beautifully golden for about 20 minutes. Lower the oven temperature to 400 degrees F (200 degrees C) and continue roasting until the juices run clear, about 30 minutes more. Allow the chicken to rest for 5 minutes before serving.
