- Begin by finely chopping the beef chuck into small, bite-sized pieces. Place the beef in a pot of boiling water and cook for about 6-7 minutes until scum rises to the surface. Drain and rinse the meat thoroughly.
- Toast the star anise and cinnamon stick in a dry pan until their fragrant aroma fills the air.
- Finely chop the onion, carrots, and tomato.
- In the same pot used for the beef, heat over high heat and add two tablespoons of cooking oil. Sauté the onions for 5-7 minutes until they become fragrant.
- Add the garlic cloves, peeled, and cook for an additional 30 seconds.
- Incorporate the Doubanjiang and soy sauce, stirring until fragrant.
- Add back the beef, along with the chopped vegetables, rock sugar, and spices. Cover with enough water to submerge all ingredients.
- Bring to a boil, then reduce to a simmer. Allow to cook for 1.5 to 2 hours until the meat is tender and the broth is rich in flavor. Remove the spices after 30 minutes to prevent overpowering the broth.
- Taste the broth before completion and adjust seasoning with more soy sauce or salt if necessary.
- While the broth simmers, cook the Chinese flat noodles in a separate pot. Drain when ready and set aside.
- Serve up your bowl of delectable beef noodle soup piping hot and enjoy.
