1 pound Beef Chuck, finely chopped
12 Onion, finely chopped
5 Garlic, peeled
2 Star Anise
1 Cinnamon Stick
8 tablespoons Soy Sauce
2 tablespoons Doubanjiang (Chinese Chili Bean Paste)
2 tablespoons Rock Sugar
1 Tomato, finely chopped
4 Carrots, finely chopped
Chinese Flat Noodles

Instructions

    1. Begin by finely chopping the beef chuck into small, bite-sized pieces. Place the beef in a pot of boiling water and cook for about 6-7 minutes until scum rises to the surface. Drain and rinse the meat thoroughly.
    2. Toast the star anise and cinnamon stick in a dry pan until their fragrant aroma fills the air.
    3. Finely chop the onion, carrots, and tomato.
    4. In the same pot used for the beef, heat over high heat and add two tablespoons of cooking oil. Sauté the onions for 5-7 minutes until they become fragrant.
    5. Add the garlic cloves, peeled, and cook for an additional 30 seconds.
    6. Incorporate the Doubanjiang and soy sauce, stirring until fragrant.
    7. Add back the beef, along with the chopped vegetables, rock sugar, and spices. Cover with enough water to submerge all ingredients.
    8. Bring to a boil, then reduce to a simmer. Allow to cook for 1.5 to 2 hours until the meat is tender and the broth is rich in flavor. Remove the spices after 30 minutes to prevent overpowering the broth.
    9. Taste the broth before completion and adjust seasoning with more soy sauce or salt if necessary.
    10. While the broth simmers, cook the Chinese flat noodles in a separate pot. Drain when ready and set aside.
    11. Serve up your bowl of delectable beef noodle soup piping hot and enjoy.
