    1. Begin by beating the butter on medium-high speed in a large mixing bowl for 2 minutes.
    2. Next, beat in the brown sugar until well combined.
    3. Add the dark molasses, ground ginger, and ground cinnamon; mix thoroughly. Then add the egg and incorporate as much of the all-purpose flour and whole wheat flour with the electric mixer. Stir in any remaining flour by hand.
    4. Refrigerate the dough for 1 hour to allow the flavors to meld together.
    5. Preheat the oven to 350°F (175°C) and prepare 3-4 cookie sheets by spraying them with non-stick cooking spray.
    6. Shape the cookie dough into 1-inch balls, then roll them in a mixture of granulated sugar and cinnamon.
    7. Place the cookie dough balls 2 inches apart on the prepared baking sheets.
    8. Bake the cookies for 8-12 minutes, or until they are set and the tops have cracked.
