Chicken Bone Broth

Ingredients
2-3 | chicken carcasses |

1 | large onion, peeled and chopped |
2-3 | large carrots, scrubbed clean and chopped |
3 | stalks celery with leafy tops, chopped |
6 | garlic cloves, peeled and cut in half |
1 | tablespoon whole black peppercorns |
15-20 | cups Water to cover |
1⁄2 | cup apple cider vinegar (helps to draw the minerals out of the bones and into the stock) |
1 | bunch parsley, rinsed |
Sea salt to taste |
Instructions
1. | Begin by placing all your ingredients (except for the parsley) into a large stock pot and bring them to a boil. |

2. | Skim off any foam that has risen to the top of the stock pot. |
3. | Reduce the heat to a simmer and continue to periodically skim off any foam that may form. |
4. | Allow the broth to simmer for at least two hours, or up to overnight (approximately 8 hours for optimal flavor). The longer the simmer, the richer the flavor, but be aware that the volume will reduce. |
5. | Ten minutes before the broth is done, add the parsley bundle (you can leave it tied, rubber band and all). |
6. | Once cooked, let the broth cool slightly and taste it. Adjust the seasoning with sea salt as needed. |
7. | Strain the broth and refrigerate it for a few hours. Any fat on the surface will solidify and can be easily removed, if desired. |
8. | Your gourmet chicken bone broth is now ready to enhance your culinary creations or can be stored in the freezer for later use. |
