5 boneless, skinless chicken breasts
2 black olives, drained
1 salsa
24 flour tortillas
14 cup vegetable oil

Instructions

1. Begin by boiling the boneless, skinless chicken breasts for about 20 minutes or until they are fully cooked. Drain the breasts thoroughly and allow them to cool. Use an electric food processor or shred the chicken by hand, then set it aside.
2. Next, puree the black olives using an electric food processor or blender. In a mixing bowl, combine the salsa, olives, and shredded chicken. Warm the tortillas in the microwave for approximately 20 to 30 seconds.
3. Place 1 to 2 tablespoons of the chicken mixture in the center of each warmed tortilla, then roll the tortillas tightly, securing them with toothpicks.
4. In a skillet, heat vegetable oil over high heat. Once the oil is hot, carefully add the rolled tacos and deep fry them until they are lightly browned. Remove from the oil, drain on paper towels, and serve.
