Chilled Avocado Gazpacho

A refreshing and creamy avocado gazpacho that is perfect for a light summer meal.

1 | tomato, cubed |

1 | cucumber, cubed |
1 | avocado, cubed |
3 | basil leaves |
½ | jalapeno, seeded and chopped |
1 | cup baby spinach leaves |
1 | celery stalk |
1 | garlic clove, crushed |
1 | teaspoon red wine vinegar |
1 | tablespoon honey |
2 | ice cubes |
salt and pepper |
Instructions
1. | Begin by finely dicing the tomato, cucumber, and avocado. Set aside a small portion of each for garnish. |

2. | In a blender or food processor, combine the diced tomato, cucumber, avocado, fresh basil leaves, baby spinach, celery, crushed garlic, jalapeno, red wine vinegar, honey, and ice cubes. Blend until the mixture is smooth and creamy. |
3. | Taste the gazpacho and adjust the seasoning with salt, pepper, and a touch more red wine vinegar if needed. |
4. | Chill the gazpacho in the refrigerator until cold. Serve in chilled bowls and garnish each serving with the reserved chunks of tomato, cucumber, and avocado. |
