Chinese Broccoli with Oyster Sauce
A traditional Chinese dish featuring crisp and tender gai lan in a flavorful oyster sauce dressing.
Ingredients
2 | tablespoons oyster sauce |

1⁄2 | teaspoon cornstarch |
2 | tablespoons chicken stock |
1 | tablespoon rice wine or dry sherry |
1⁄2 | teaspoon sugar |
1 | teaspoon soy sauce |
1⁄2 | teaspoon sesame oil |
1 | finely shredded ginger |
1 | garlic |
1 | -1 ½ lb gai lan (chinese broccoli) |
1 | teaspoon soy sauce |
1 | tablespoon olive oil |
Instructions
1. | In a small saucepan, combine oyster sauce, cornstarch, chicken stock, rice wine, sugar, soy sauce, ginger, minced garlic, and sesame oil. Bring to a boil and cook until the sauce thickens. Set aside. |

2. | Wash the gai lan in cold water and trim off tough bottoms. Peel thick stalks and cut the gai lan into thirds if desired. |
3. | In a wok, bring 1-3 quarts of water to a boil and add soy sauce and olive oil. Add the greens, cover with a lid, and bring back to a boil. Turn off the heat and let the greens steam for a minute or two. |
4. | Check one green stalk for doneness; it should be tender and crisp. Drain immediately, shake off excess water, transfer to a platter, pour the dressing over, and serve immediately. |
