½ red bell pepper, diced
3 scallions, finely sliced
celery, sliced
1 tablespoon fresh cilantro or parsley, chopped
1 cup mayonnaise
2-4 chipotle chiles in adobo, deseeded and diced finely (or more, use the seeds if you like the heat)
1 tablespoon sugar
8 bacon slices, cooked very crisp and crumbled, reserve 1 tablespoon for garnish
1 (15 ounce) can black beans, rinsed and drained
6 hard-boiled eggs, diced
8 medium red potatoes, cooked, cooled and diced
salt & pepper

Instructions

Preparing the Salad

1. Combine the diced red bell pepper, scallions, celery, cilantro, mayonnaise, chipotle chiles, sugar, and most of the crumbled bacon in a large bowl.
2. Add in the black beans, hard-boiled eggs, and diced red potatoes. Mix everything together until well combined.
3. Taste the salad and adjust the seasoning with salt and pepper to your preference. Feel free to add more pepper for extra flavor.
4. Sprinkle the remaining tablespoon of bacon on top for garnish.
5. Chill the salad in the refrigerator before serving.
