1 | (15 ounce) can black beans, rinsed and drained |
6 | hard-boiled eggs, diced |
8 | medium red potatoes, cooked, cooled and diced |

Instructions
Preparing the Salad | |

1. | Combine the diced red bell pepper, scallions, celery, cilantro, mayonnaise, chipotle chiles, sugar, and most of the crumbled bacon in a large bowl. |
2. | Add in the black beans, hard-boiled eggs, and diced red potatoes. Mix everything together until well combined. |
3. | Taste the salad and adjust the seasoning with salt and pepper to your preference. Feel free to add more pepper for extra flavor. |
