Ingredients

½ teaspoon kosher salt
½ teaspoon baking soda
1 tablespoon baking powder
¾ cup granulated sugar
3 ½ all-purpose flour
1 cup unsalted butter, cut into ½-inch cubes and frozen
1 cup dried cherries
1 cup dark chocolate chunks or chips
¾ cup buttermilk
¾ cup heavy cream

Instructions

    1. Preheat the oven to 400°F with 2 racks positioned in the middle.
    2. In an electric stand mixer with the paddle attachment, combine kosher salt, baking soda, baking powder, granulated sugar, and all-purpose flour. Mix on low speed until well combined. Add the frozen unsalted butter cubes and cover the bowl with a kitchen towel. Mix on medium speed until the butter breaks up into smaller pieces within the flour mixture. Add the dried cherries and dark chocolate chunks or chips, then mix on low speed until incorporated. Slowly pour in the buttermilk and heavy cream, mixing on medium speed just until combined. Be careful not to overmix to maintain a tender texture.
    3. Using a medium ice cream scoop (approximately 2 ounces), drop leveled scoops of the dough onto 2 large baking sheets lined with parchment paper. Bake for 8 minutes, then rotate the baking sheets top to bottom and front to back. Continue baking until the scones are lightly golden brown and cooked through, about 8 more minutes.
    4. Allow the scones to cool for at least 5 minutes on the baking sheet before serving warm.
