2 14 all-purpose flour
12 teaspoon baking soda
1 teaspoon baking powder
12 teaspoon sea salt
1 12 sugar
2 low-fat cream cheese
6 tablespoons unsalted butter, melted, still warm
13 cup canola oil
1 large egg
2 teaspoons vanilla extract
1 tablespoon skim milk
2 tablespoons sugar
2 teaspoons cinnamon

Instructions

1. Preheat the oven to 350 degrees Fahrenheit and adjust the rack to the middle position. Line two large baking sheets with parchment paper.
2. In a medium bowl, whisk together 2 1/4 cups of all-purpose flour, 1/2 teaspoon of baking soda, 1 teaspoon of baking powder, and 1/2 teaspoon of sea salt. Set aside.
3. In a mixing bowl, combine 1 1/2 cups of sugar and room temperature low-fat cream cheese. Pour in warm melted unsalted butter and mix until well combined. Whisk in canola oil, then add the large egg, vanilla extract, and skim milk, mixing until smooth. Slowly incorporate the flour mixture using a rubber spatula until a soft dough forms.
4. Take about 1 tablespoon of the dough and roll it into a ball, roughly the size of a ping pong ball. In a shallow pie tin, mix together 2 tablespoons of sugar and 2 teaspoons of cinnamon. Gently roll the dough ball in the sugar and cinnamon mixture to coat it. Place the coated dough ball on a cookie sheet and gently flatten the top.
5. Bake one tray at a time in the preheated oven for approximately 11-14 minutes or until the edges are set and just beginning to brown. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a cooling rack until they reach room temperature. Enjoy these delightful cookies!
