Ingredients

1 (6 ounce) package white baking chocolate
½ cup butter
1 (18 ¼ ounce) package white cake mix
1 cup milk
3 eggs
1 tablespoon cinnamon, Saigon if possible
cinnamon cream cheese frosting (see intro)

Instructions

1. Preheat the oven to 350°F.
2. In a medium microwavable bowl, heat the white baking chocolate and butter in the microwave on HIGH for 2 minutes or until the butter is melted.
3. Stir the mixture until the white chocolate is completely melted. Allow it to cool for about 5 minutes or until it reaches a lukewarm temperature.
4. In a large bowl, combine the white cake mix, milk, eggs, Saigon cinnamon, and the cooled chocolate mixture. Mix with an electric mixer on low speed just until moistened, scraping the sides of the bowl frequently.
5. Beat the mixture on medium speed for 2 minutes or until well blended.
6. Divide the batter evenly into two greased and floured 9-inch round cake pans.
7. Bake for 25 to 28 minutes or until a toothpick inserted in the centers comes out clean.
8. Allow the cakes to cool in the pans for 10 minutes before removing them. Cool completely on wire racks.
9. Frost the cooled cakes with cinnamon cream cheese frosting.
