Instructions
-
- Begin by preheating the oven to 350 degrees.
- In a small saucepot, heat canola oil and sauté onions and garlic until translucent.
- Add finely chopped chipotle pepper and arbol chilies, and continue cooking until the chilies start to toast.
- Sprinkle in cracked black pepper, then deglaze the pot with Worcestershire sauce and orange juice. Allow the mixture to reduce until it starts to thicken.
- Next, stir in your favorite barbecue sauce, lower the heat, and let it simmer for approximately 15 minutes.
- Season the sauce with dashes of hot sauce, lemon juice, and salt to taste. Strain the barbecue sauce and set it aside.
- On a large sheet pan, rub the pork loin with olive oil and season generously with salt and cracked pepper.
- Roast the pork loin in the 350-degree oven, basting it with the citrus glaze every 15 minutes, until the internal temperature reaches about 140 degrees.
- Remove the pork from the oven and allow it to rest for approximately 5 minutes. Slice the meat, serve, and enjoy!
