A succulent pork loin coated in a tangy citrus glaze, roasted to perfection.

Ingredients

2 ounces canola oil
1 large onion, chopped
4 cloves garlic, chopped
1 chipotle pepper, chopped
1 arbol chile, steam removed
1 tablespoon cracked black pepper
2 tablespoons Worcestershire sauce
2 cups orange juice
2 cups of your favorite barbecue sauce
6 dashes hot sauce
2 lemons (juice of)
3 lbs pork loin
4 tablespoons olive oil
2 tablespoons kosher salt
2 tablespoons cracked black pepper

Instructions

    1. Begin by preheating the oven to 350 degrees.
    2. In a small saucepot, heat canola oil and sauté onions and garlic until translucent.
    3. Add finely chopped chipotle pepper and arbol chilies, and continue cooking until the chilies start to toast.
    4. Sprinkle in cracked black pepper, then deglaze the pot with Worcestershire sauce and orange juice. Allow the mixture to reduce until it starts to thicken.
    5. Next, stir in your favorite barbecue sauce, lower the heat, and let it simmer for approximately 15 minutes.
    6. Season the sauce with dashes of hot sauce, lemon juice, and salt to taste. Strain the barbecue sauce and set it aside.
    7. On a large sheet pan, rub the pork loin with olive oil and season generously with salt and cracked pepper.
    8. Roast the pork loin in the 350-degree oven, basting it with the citrus glaze every 15 minutes, until the internal temperature reaches about 140 degrees.
    9. Remove the pork from the oven and allow it to rest for approximately 5 minutes. Slice the meat, serve, and enjoy!
