2 mashed bananas
12 cup milk
2 cups all-purpose flour
3 teaspoons baking powder
12 teaspoon salt
2 beaten eggs
1 tablespoon melted margarine
1 quart vegetable oil for frying
12 cup confectioners' sugar, or as needed

Instructions

    1. In a large mixing bowl, combine mashed bananas and milk. Sift in all-purpose flour, baking powder, and salt. Add beaten eggs and melted margarine, then mix thoroughly until well combined.
    2. In a large, deep skillet, heat vegetable oil to 365 degrees F (180 degrees C).
    3. Carefully drop spoonfuls of the fritter mixture into the hot oil. Cook, turning once, until they turn a golden brown color, approximately 5 minutes. Remove the fritters and place them on a plate lined with paper towels to drain.
    4. Sprinkle the warm fritters with confectioners' sugar before serving.
