This is a straightforward chicken salad with tender cooked chicken, crisp celery, a little onion, and a creamy lemon-Dijon dressing. Serve it chilled on lettuce, in sandwiches, or with crackers for a simple lunch.

1⁄4 | cup red onion, finely chopped |
1⁄2 | cup mayonnaise |
1 | tablespoon lemon juice, fresh |

1⁄4 | teaspoon black pepper, freshly ground |
2 | tablespoons fresh parsley, chopped |

| 1. | Stir the mayonnaise, lemon juice, Dijon mustard, salt, and black pepper together in a large bowl until smooth. |
