Image for recipe: Classic French Yogurt Cake
Serves: 8 loaves
Ingredients: 7

A delightful and moist cake that embodies the essence of French baking, infused with tangy yogurt and hints of citrus.

Ingredients

1 12 teaspoons baking powder
1 4-oz. container vanilla yogurt, at room temperature for an hour (Dannon Activia and Stonyfield YoBaby are this size)
½ vegetable oil
2 sugar
3 all-purpose flour
2 eggs, at room temperature for an hour
1 orange, zested

Instructions

1. Begin by preheating the oven to 350°F. Lightly grease an 8.5 x 4.5-inch loaf pan, line it with parchment paper extending by approximately 1/2 inch on the long sides, and lightly grease the paper.
2. In a spacious bowl, combine the baking powder with the vanilla yogurt. Add all remaining ingredients in the specified order, incorporating each one by whisking thoroughly. It is important to rinse and dry the yogurt container between measuring the vegetable oil and sugar.
3. Transfer the batter into the prepared pan and bake until perfectly done, typically around 50 minutes.
4. After baking, allow the cake to cool in the pan for 5 minutes. Then, run a knife along the edges, and carefully lift the cake out of the pan using the overhanging parchment paper. Let it cool completely before slicing into this delectable treat.
