Ingredients

2 cups milk
1 cup heavy cream
4 egg yolks
½ cup sugar

Instructions

1. In a medium saucepan, combine the milk and cream. Heat the mixture until foam forms around the edges, then remove from heat.
2. In a large bowl, whisk the egg yolks and sugar together until frothy. Gradually pour the warm milk into the egg yolk mixture, whisking continuously. Return the combined mixture to the saucepan and cook over medium heat, stirring with a wooden spoon until the mixture thickens slightly and coats the back of the spoon. If you notice small lumps of egg beginning to form, promptly remove from heat.
3. Strain the mixture through a sieve or fine strainer into a bowl. Cover and refrigerate for several hours or overnight.
4. Transfer the chilled mixture to an ice cream maker and churn according to the manufacturer's instructions. Once churned, place the gelato in a sealed container and freeze until firm. If the gelato is too hard, allow it to soften in the refrigerator until reaching the desired consistency.
