Instructions
1. | In the bowl of an electric mixer, combine the all-purpose flour and white sugar. Cut the chilled unsalted butter into tablespoon pieces and add it to the flour mixture. Use the paddle beater attachment to cut the butter into the flour. Alternatively, this step can be done manually using a pastry blender. |

2. | While the mixer is on low speed or if mixing by hand with a fork, slowly pour in the ice-cold water. Stop stirring once the dough starts to clump together, just before it forms a solid ball. |
3. | Gently knead the dough in the bowl until it comes together to form a ball. Divide the dough into two equal parts. Flatten each portion into a disk shape, then chill in the refrigerator for approximately 30 minutes before rolling. |
