1 12 cups sugar
1 teaspoon salt
1 teaspoon cinnamon
12 teaspoon ginger
12 teaspoon nutmeg

3 12 cups solid pack pumpkin
1 12 cups evaporated milk

  • Preparation

    1. Line two 9-inch pie plates with pie shells.
    2. In a small bowl, combine sugar, salt, cinnamon, ginger, and nutmeg.
    3. In a large bowl, beat the eggs; stir in the pumpkin and the sugar-spice mixture. Gradually stir in the evaporated milk.
    4. Pour the mixture into the pie shells; cover the edges with a narrow piece of foil, avoiding contact with the filling.
    5. Bake at 425°F (220°C) for 20 minutes; then reduce the heat to 350°F (180°C) and bake for an additional 35-45 minutes, or until a knife inserted in the center comes out clean or the center of the pie is set.
