Ingredients for Strawberry Custard Cream Pie

1 cup sugar
6 tablespoons cornstarch
12 teaspoon salt
2 12 cups scalded milk
2 lightly beaten eggs
3 tablespoons butter
12 teaspoon vanilla
1 9-inch baked pie shell
2 strawberries, stems removed and halved
1 cup heavy cream
1 tablespoon sugar

Instructions

Preparation of Custard Filling:

1. Combine sugar, cornstarch, and salt in a medium saucepan. Gradually add scalded milk and cook over medium heat, stirring constantly until thick.
2. Temper the beaten eggs by adding a small amount of the hot mixture to them, then quickly whisk together.
3. Return the egg mixture to the saucepan and continue cooking, stirring constantly until thick.
4. Remove the saucepan from heat and stir in butter and vanilla extract.
5. Cover the custard mixture and chill in the refrigerator.

Assembly of the Pie:

1. Whip the cream, then add sugar and beat until thickened.
2. Pour the chilled custard mixture into the bottom of the baked pie shell and arrange the halved strawberries over the top.
3. Just before serving, generously spread the whipped cream over the top of the strawberries.
4. Garnish with additional berries if desired.
